White Chocolate Peppermint Popcorn

We love watching Christmas movies as a family.
This is my go to recipe for those nights we are sitting next to the Christmas tree watching our favorites.
White chocolate popcorn drizzled with some red candy melts for color and sprinkled with lots of crushed peppermint.
This popcorn is creamy and peppermint flavored.
With the candy melts, it is not overly sweet or rich.
It takes 3 hours for this popcorn to dry, so I make it when my kids are at school, or the day before.
The recipe will make one big bowl of popcorn.
It also makes great neighbor gifts when put in a clear bag and tied with a bow.

There are two different kinds of popcorn that you can use to make this popcorn.
I prefer mushroom popcorn but it can be made with snowflake popcorn.
Also if you own a popcorn popper then you can skip the popcorn on the stovetop part.

Instructions


  1. Popping your popcorn on stovetopIn a large pot with a lid and a handle, pour oil just to cover the bottom of the pot.
    (Prepare a bowl to hold the popcorn.)
  2. Put a few kernels of popcorn in the pot and cover with the lid, turn the heat to high.
  3. Listen to hear the popcorn pop.
  4. Once a kernel or two has popped pour the rest of the popcorn in and cover it quickly.
  5. Shake the pot back and forth by the handle over an over again the entire time it is popping.
  6. The popcorn will start popping a lot.
  7. Once you hear it slowing down a bit.
  8. Pour it into your bowl and let cool a little.
    or If you have a popcorn popper you can just make it in that.

Assembly


  1. Cover your countertop with two big strips of parchment paper, tape them to the countertop.
  2. Take your candy melts and put them in a bowl.
  3. Melt them in the microwave for 1 minute.
  4. Pull them out and start stirring.
  5. The bowl will be hot.
  6. Continue stirring until all of the candy melts are melted.
  7. Immediately pour it over your bowl of popcorn and start mixing as fast as you can to incorporate the chocolate.
  8. Pour the popcorn out onto the parchment.
  9. Spread out the popcorn with the back of a spoon so it is all lying flat.
  10. While your white popcorn is still wet.
  11. Take your red candy melts and put them in a clean bowl.
  12. Melt in the microwave for 1 minute.
  13. Stir until it is all melted.
  14. Take the melted red candy melts and pour them into a plastic freezer bag, into one of the corners.
  15. Hold the back at the back behind the chocolate and standing next to your popcorn, cut off the tip of the bag, a very small hole.
  16. The chocolate will come flowing out.
  17. Drizzle it by moving it back and forth over your popcorn until the bag is all gone, or you feel like you have enough red on your popcorn.
  18. Sprinkle your peppermints all over your wet popcorn so it will stick.
  19. Let dry for at least 3 hours.
  20. It can be left out overnight on the counter and will be fine if you are wanting to make it the night before.
