Vanilla Bean Unicorn Sugar Cookies

Soft vanilla bean sugar cookies.
Frosted with vanilla bean frosting that melts in your mouth.
These sugar cookies remind me of a Granny Bs sugar cookie.
I used a star tip for the mane and a 1 for the eyes and horn.

Instructions


  1. Take butter, beat in the mixer until it is creamy, add in sugar and beat until fluffy.
  2. Add in the eggs and vanilla then mix to combine.
  3. Sift together flour, baking soda, baking powder, and salt.
  4. (I just whisk it in a bowl).
  5. Add half of the flour to the butter and mix,then add the sour cream and mix,and then the rest of the flour and mix to fully incorporate.
  6. Take the dough and roll it out between two parchment papers to about ⅓ inch thick.
  7. Put in fridge laying flat.
  8. Chill for 2 to 3 hours.
  9. Pull out and cut with unicorn shape.
  10. Bake at 375℉ for 6 to 8 minutes.

Buttercream Frosting

Ingredients


  1. 4 tablespoons of butter
  2. 2 ⅓ cups powdered sugar
  3. 1 teaspoon vanilla
  4. 1 tablespoon milk

Instructions


  1. Put butter in bowl and beat with electric mixer until fluffy.
  2. Add about half the powdered sugar and mix until combined.
  3. Beat in milk and vanilla.
  4. Slowly add in the rest of the powdered sugar and mix on high until the frosting is smooth.
  5. Add more milk if needed.
  6. Take a small section of frosting out and set it aside to dye yellow for the eyes and horn of the unicorn.
  7. Leave the rest white, or add purple food coloring for mane if desired.
  8. Take your white frosting and smooth it onto your cookie.
  9. Put it in the freezer to harden a bit and then take a butter knife and run it under hot water.
  10. Use the straight edge of the butter knife to smooth the frosting.
  11. Take your purple frosting and pipe it onto the cookies for the mane.
  12. Finish the eye detail and horn with some yellow frosting.
