Chocolate Peppermint Cupcakes

Tender chocolate peppermint cupcake with a luxurious chocolate frosting, drizzled with chocolate and topped with some crushed candy canes.
These cupcakes were like a dream.
I have to admit that I am a chocolate lover.
Whenever I approach the dessert bar, this is exactly what I’m hoping for.
Something chocolate that is completely worth the calories and entirely satisfying.

Preheat oven to 350℉ and line two cupcake pans with cupcake liners.
In a bowl, sift together dry ingredients, set aside.
In mixer, beat butter on high until creamy and smooth.
Add in brown sugar and granulated sugar and mix on high for 2 minutes.
Add eggs to the butter mixture and mix just until combined.
Take bowl full of dry ingredients, and buttermilk and add it alternately to the butter mixture.
Start by adding ⅓ of the flour mix, then half of milk, then another third, then more milk, and finish with the last ⅓ of the flour.
Scoop cupcake batter into the prepared pans and bake in the oven for 15 to 20 minutes.
Once cupcakes have been baked, pull them out and stick them in the freezer to cool while you make the frosting.
Make chocolate frosting and frost the cupcakes.
Drizzle with melted chocolate and top with candy canes.

Put stick of butter into a mixing bowl.
Cream the butter on high until it is coating the bowl.
Add in both of the cocoa powder and the powdered sugar all at once.
Turn the mixer on for a few minutes to get butter mixed in with the powdered sugar.
With mixer going, add in the whipping cream until the frosting starts to come together.
Whip on high for a few minutes.
Add in peppermint extract.
Melt 1 cup of chocolate in microwave and stir until completely melted.
While mixer is going, slowly add in the melted chocolate.
Mix for another 2 minutes on high to make sure that it is thoroughly incorporated.
