Chocolate Dipped Shortbread

Buttery rich melt in your mouth shortbread cookies dipped in chocolate.
These are my favorite Christmas cookies and I make them with my kids every year.
I always cut them out to look like gingerbread men.
I’m the official chocolate dipper and my kids love adding the eyes and M&M buttons.
It’s always fun to have my kids with me in the kitchen.

Ingredients


Instructions


In a mixer combine butter and sugar to mix just until combined.
Then slowly add in flour, salt and vanilla.
Mix until dough starts coming together and forms large clumps.
Roll out and cut with cookie cutters and bake in the oven at 350℉ for 15 minutes.

Let cool
In the microwave, melt 1 package of milk chocolate chips for 1 minute.
Add in 2 tablespoon of oil and mix well.
Take the shortbread cookies and dip them into the chocolate mixture shaking the excess off over the bowl.
Shake the shortbread cookie to smooth the chocolate and then set on a parchment paper.
Add the mini chocolate chips for eyes and the M&M’s for the buttons and let the chocolate cool.

Decorate with your red and green candy melts that have been melted in the microwave for 1 min,
stirred to smooth them and put into a piping bag.
Cut off the tip and drizzle on for the detail.
