Chocolate Oreo Mint
Ice Cream Cake

This cake is a mint chocolate dream.
Chocolate cake filled with Ben and Jerry’s mint chocolate cookie ice cream, chocolate ganache, and mint Oreos.
Then frosted with a chocolate mint buttercream.

Chocolate Cake Layers

Ingredients


  • 2 eggs
  • ⅔ cup water
  • ¼ cup chocolate chips
  • ⅔ cup of hot cocoa
  • 2 ounces baking chocolate
  • ⅔ cup oil
  • ⅔ cup sour cream
  • 1 teaspoon vanilla
  • 1 ⅓ cup sugar
  • 1 cup flour
  • ⅔ cup cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder

Instructions


  1. Preheat oven to 325℉ and prepare three six inch pans by spraying with pam and lining with parchment.
  2. Sift together flour, cocoa, baking soda, and baking powder in a bowl and set aside.
  3. In a mixing bowl, beat eggs until they are light and fluffy.
  4. Take hot cocoa and heat it in the microwave.
  5. Add chocolate to it and stir until the chocolate is completely incorporated.
  6. To the eggs, add oil, sour cream, vanilla, and then the chocolate mixture, stir to combine.
  7. Then add sugar to the chocolate mixture.
  8. After it is combined, slowly add flour mixture and stir to incorporate.
  9. Take 3 pans and using a 1 cup measuring cup divide the batter evenly, filling your pans up to ⅔ full.
  10. Bake at 325℉ for 30 mins or until a toothpick inserted in the center comes out clean.
  11. Put cake layers in the freezer until they are ready to use.

Mint frosting

Ingredients


  • 1 stick butter
  • 1 32 oz bag powdered sugar
  • 1 pint heavy whipping cream
  • Dash of salt
  • 1 bag of guittard mint chips
  • 1 teaspoon peppermint extract (optional)

Instructions


  1. In the bowl of a mixer with a paddle attachment, beat butter until it is smooth and coating the bowl.
  2. Add in powdered sugar and mix it into the butter.
  3. It will just be powder at this point.
  4. Take your heavy cream and slowly add it into the mixing bowl until the frosting starts to come together.
  5. Whip the frosting on high until it is smooth.
  6. Melt mint chips in the microwave for 1 minute and then stir them until they are smooth and completely melted.
  7. While the mixer is going slowly pour the melted chips into frosting, turn up the speed and whip the frosting for a few minutes to ensure the chips are incorporated smoothly.
  8. Last add in the salt, taste the frosting and if you prefer a stronger mint flavor then add in the peppermint extract.

Ganache

Ingredients


  • 2 cup milk chocolate chips
  • ½ cup heavy whipping cream

Instructions


  1. Pour chocolate and whipping cream into a bowl and microwave them for 1 minute.
  2. Stir until the mixture is smooth.

Layering

Ingredients


  • 1 container of mint Oreos
  • 2 containers of Ben and Jerry’s Mint Chocolate Cookie Ice Cream

Assembly Instructions


Bake chocolate cake layers in two 8 inch pans and stick them in the freezer until they are ready to use.
Line another 8 inch cake pan with parchment.
Take the two tubs of Ben and Jerry’s mint chocolate ice cream and microwave each for 10 seconds.
Take the ice cream out and press it into the cake pan to mold it.
Place the ice cream in the freezer for 4 hours or overnight.
When you are ready to assemble the cake, make the frosting and cut 2 sleeves of Oreos into ¼ size pieces, reserving the rest for the top.
Once the frosting is made, make ganache, and then stack the cake with cake on bottom, then frosting, then pour on ganache, and put Oreos on top.
Run a butter knife around the outside edge of ice cream and then pop it out of the pan with knife.
Place this as the next layer.
Then pipe on frosting, ganache, remaining Oreos, and chocolate cake on top.
Frost the outside of the cake with remaining mint frosting and continue to decorate.
Use remaining ganache to create a drip on the outside of the cake.
