Minestrone Soup

Warm, hearty, full of veggie goodness, and with just enough pasta.
I top it with a sprinkle of Parmesan and serve it with a side of bread.
Nothing felt better after a long party filled week than sitting down to a bowl of this healthy soup with my family and feeling a bit of normalcy.
This soup has been a regular meal at our house in the winter for the past ten years and is my personal favorite.


  • 1 small onion chopped
  • 2 teaspoons garlic chopped
  • 1 stick of celery chopped
  • 1 carrot chopped
  • 1 can of diced tomatoes
  • 1 can of green beans
  • 1 can of white beans
  • ½ box of farfalle pasta
  • 5 cups chicken stock


In a large soup pot cook your garlic and onion over medium heat until your onion is slightly translucent.
Add your carrot and celery to the pot and cook until they are tender.
Add in your can of diced tomatoes, green beans and white beans.
Pour in your chicken stock and add your farfalle.
Boil the soup until the farfalle is fully cooked.
Serve with a sprinkle of parmesan and a side of bread.
