Pull Apart Cinnamon Pumpkin
Bread with Cream Cheese Frosting

There is nothing better than waking up to the smell of pumpkin cinnamon bread in the oven.
This pull apart pumpkin bread has caramel undertones, is filled with a cinnamon filling,
and is iced with cream cheese icing. I developed this recipe after searching for a pull apart
pumpkin loaf and being unsuccessful in finding the perfect recipe with pumpkin in the bread
and cinnamon in the filling. I usually serve this for breakfast. You can bake it the night before,
or it can be prepared and put in the fridge overnight before the last rise. In the morning
I pull it out of the fridge and let it set on the counter to rise, and then pop it in the oven
for an hour. It’s heavenly served warm.

  1. In a mixing bowl combine the yeast, warm water, and brown sugar. (Make sure that your
    water is not too hot or it will kill your yeast.) Let sit 5 minutes until bubbly.
  2. Heat milk in a separate bowl in the microwave to scald, then add the butter and pumpkin
    puree. Pour pumpkin mixture into the bowl with the yeast. Then add salt, egg, pumpkin pie
    spice, and 3 cups of flour. Mix until thoroughly combined.
  3. Slowly add the rest of the flour by ½ cup until the bread pulls away from the side of the bowl
    and is no longer sticky.
  4. Cover the bowl with the dough and let it rise for 1 hour until doubled in size. Make your filling
    during this time.
  5. Pull out and punch down the dough and then roll it out into a large rectangle that is about 2ft
    by 1.5ft and ¼ inch thick.
  6. Pull out the filling that has been prepared and spread it all over the rolled out dough.
  7. Cut the dough in half lengthwise and then into 2.5 inch strips. Stack the 2 rows of strips
    one on top of the other so you have 2 stacks of dough. Cut these stacks into 3 sections.
  8. Take the sections of dough one at a time and stack them side ways into a large bread pan
    sprayed with oil. Cover and let rise for ½ hour. The dough will be rising up out of the pan.
  9. Uncover the dough and stick the bread pan on a cookie sheet. Bake in the oven at 350℉ for 60 mins.
  10. Cover the bread with foil for the last 20 minutes of baking to prevent it from becoming overly brown.
  11. Once the bread has cooled a little put the icing in a piping bag and drizzle it over the bread.

  1. Melt butter in a bowl in the microwave, add in brown sugar and cinnamon and stir. It should look like a dark runny liquid.

  1. Mix butter until smooth, add cream cheese and mix until smooth, then add powdered sugar and 1 t vanilla.
